Meet the 'Salon 75'

During the Art Deco era of the 1920s, the “French 75” cocktail was all the rage among swank Parisians. Fast forward a century, we commissioned our own sultry, modern take on this classic to commemorate the opening of 'Salon des Rêves' at the Château.

We can't wait to mix one of these specialty sparkling cocktails for you when you visit the new Salon, but until then, channel your own inner Parisian chic at home.

Ingredients

  • 1/2 oz lemongrass syrup
  • 1/4 tsp juniper extract
  • 1/4 oz fresh lemon juice
  • 4 ½ oz Domaine Carneros Ultra Brut
  • Garnish: lemon peel, edible flower

Instruction

1) Measure and pour lemongrass syrup, juniper extract, and lemon juice to a coupe glass.

2) Top with Domaine Carneros Ultra Brut.

3) Garnish with a lemon twist or an edible flower.

To Make Lemongrass Syrup

Ingredients

  • 1 cup boiling water
  • 1 cup granulated sugar
  • 1/2 cup dried lemongrass

Instruction

1) Combine boiling water and sugar. Stir until dissolved.

2) Add dried lemongrass and steep for 3 minutes.

3) Strain the mixture through a fine mesh strainer into a container, pressing to extract liquid.

4) Allow to cool to room temperature, then transfer to an airtight container and chill before using.

Note: The syrup will keep for up to two weeks in the refrigerator and is a delightful addition to iced or hot tea.
